Description
Fish Fumet. Made from the bones and trimmings of a diversity of white fish together with white wine and aromatics. It is delicately simmered to the point of Fumet, then reduced all the way down to a glace. Its clear yellow color and lovely aroma are excellent as a braising or poaching liquid, in addition to its primary use in sauces. Used full strength, Fumet de Poisson Gold adds just the right touch to classical sauces giving them a complexity not duplicated together with neat stock. Makes approximately 6 cups (1,4l) of classic fish fumet (stock).
